Singapore Noodles is a Chinese take-away staple. It is a dry spicy curry rice noodle dish with vegetables, meat, and/or seafood. Be prepared for it to clear your sinus. We love it our household. My recipe is for Vegetable Singapore Noodles.

My version is a vegetarian and vegan recipe which will satisfy the meat-eaters sitting at your table. This is a really flexible recipe that you can load up on your colorful crunchy veggies. One can never have enough vegetables in my mind so the more you can add the better. You can choose to chop your vegetables or get them out of a bag fresh or frozen. Or even mix them. It is up to you based on your resources. All the ingredients you should be able to get at your local grocery store chain.

This recipe serves 4-6 people. And makes a great next day lunch.

Vegetable Singapore Noodles

Ingredients

  • 7 oz package rice vermicelli noodles
  • 1 cup water
  • ¼ cup soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons oil
  • Onion, sliced thinly
  • 2 green onions, chopped, white and green separated
  • Red pepper, sliced thinly
  • Chinese or Savoy cabbage, sliced thinly
  • 1 package vegetable stir-fry mix, your choice
  • 2 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 1/2 cup frozen peas
  • 2-4 tablespoons curry powder depending on personal heat levels

Preparation

  • Cook noodles according to the package directions. Rinse under cold water to stop the cooking process and drain. Set aside.
  • Mix together the water, soy sauce and sugar and set aside.
  • Heat oil in a large pan or wok over medium-high heat. Fry the onion, white parts of the green onion, red pepper and all other vegetables until soft, then add the garlic and ginger. Fry until the garlic is fragrant and soft.
  • Add the curry powder and fry, stirring constantly.
  • Mix the prepared rice vermicelli to the pan and stir well to coat in the curry powder.
  • Pour in the water-soy sauce mix and simmer over medium heat until the noodles have absorbed all the liquid.
