You may have guessed by now that I love dill. Fresh dill that is. Every year I can not wait to get dill in my garden pots so I can start using it in salads such as this and potato salad. Dill can be a strong flavor, but I think that is what I like about it. It is strong and fresh tasting.
In this recipe, there is only fresh dill, red onion, capers, oil, tomatoes, salt, and pepper. Super easy to make quickly. I will say that it does have strong ingredients in the dill, red onion, and capers. Make sure to slice the red onion to paperlike thinness so the flavor is not so intense. I have to admit I like that strongness of flavor in this salad. It may take you a few tries to work out a balance for you. Reduce some and increase others. Do what works for you. I encourage you to do that. Make it your own.
You can eat this alone as I have for a lunch. I usually serve it with smoked salmon, grilled salmon, or beef. It works really well with burgers done on the grill.
By the way, it looks fantastic on the table. I like to serve it on a contrasting color plate. That really brings out the colors and textures of it.
Ingredients
- 1-2 pounds tomatoes, sliced
- 1/2 cup olive oil
- 1/3 cup fresh dill, torn
- 1/3 cup capers, chopped
- 1/2 red onion sliced thinly
Preparation
- Slice tomatoes and arrange them on a plate.
- Combine oil, dill, capers, and onion.
- Drizzle over tomatoes.
- Sprinkle to taste Kosher salt and a generous turn of the pepper grinder.
