I was very lazy while doing groceries and instead of going to multiple shops, I decided to do all of my groceries at BJ’s. On my list was portobello mushrooms as I wanted to marinate them then put them on the grill as a burger. Now when you go to BJ’s or other warehouse retailers, everything is super sized so I came home with six huge mushrooms.
After making three portobello mushroom burger, I had three leftover. What to do with them? Stuffed portobello mushrooms was the solution. This is a simple and quick recipe that is filling and delicious. We had it for lunch with a salad. It could work for dinner as well, but instead of having only one mushroom, have two. If you are meat-eating then you could add grilled chicken or beef. You could also use smaller mushrooms serving it as an appetizer.

Ingredients
- 4 Portobello Mushrooms, stems removed
- Olive Oil
- 1 TSP Minced Garlic
- 1 Cup Spinach, chopped
- 1/2 Cup Cherry Tomatoes, halved or quartered
- 1/4 Cup Panko Breadcrumbs
- 1/4 Cup Parmesan Cheese, grated
- 1/2 Cup Mozzarella Cheese, shredded
- 1 TSP Italian Seasoning
- Salt & Pepper to taste
- Fresh Basil for garish
Preparation
- 1. Preheat oven to 375F.
- 2. Brush mushrooms with olive oil. Place gill side up on a lightly oiled baking sheets. Put in oven for 15-20 minutes.
- 3. Heat a medium frying pan over medium-high heat with some olive oil. Add garlic cooking for a couple of minutes then add the spinach and tomatoes until spinach is wilted and tomatoes start to breakdown a little.
- 4. While the spinach mix is cooking, combine the cheeses, breadcrumbs, and seasoning.
- 5. Combing everything together then stuff the mushrooms adding some mozzarella on the top.
- 6. Place in the oven and bake for 15-20 minutes.
- 7. Garish with basil.
