The season is changing from summer to fall. At least that’s what the calendar says, but it still feels like summer here in eastern North Carolina.
Regardless what the weather was today, 78F with 1000% humidity, I was drawn to making a cold weather favorite, rosemary-scented lentils and sausage. It is a very simple, but wonderful meal.
I got the recipe from Cooking Light years ago. I’ve made it for friends and family. Everyone comes back for seconds.
This time around, I couldn’t find fresh rosemary at the grocery store and when I looked in my spice cabinet I was lacking dried as well, so I substituted dried Italian seasoning. It turned out nicely. And I just use regular lentils. Nothing fancy.
