White Rice. We love it, but sometimes it gets a bit boring. My guys aren’t crazy about seasoned rices so making Mexican Rice or Arroz Mexicano is taking a chance. Especially for my son who could eat plain white rice three meals a day.
As the weather is getting warmer after a cool damp spring in Newport, I wanted to have a simple dinner. Some chicken on the grill with salsa, guacamole, and tortillas as I had Roma tomatoes and avocados that were getting overly ripe and needed eating. When I told him about the dinner menu he asked if we should have rice and beans. Of course I told him that makes the meal no longer simple.
Anyway, back to the rice. After thinking about it, I agreed with him that some rice would be good to bulk up the meal a little bit. As I was making salsa and guacamole, I thought about Mexican rice as a nice addition. I’m more lazy than tired so I decided to use the rice cooker. After all I was already making salsa and guacamole so I was already preparing food from scratch.
I’m all about cooking good simple fresh food without spending hours in the kitchen. This rice recipe for the slow cooker in easy and simple with great results. All you need is rice, onion, canned tomatoes, veggie broth, minced garlic, butter, and spices and you will have a flavorful rice dish that you could eat as meal with a salad or as a side or filling for a burrito/taco. I have made this dish plant-based using veggie broth and plant-based butter, but you can use chicken broth or dairy butter if you like. That’s the nice thing about today is that it is getting easier to do a one-for-one swap in recipes to make them plant-based.
Rice Cooker Mexican Rice is a nice addition to your menu offerings.
Ingredients
- 1 cup Long Grained Rice
- 1 cup Veg Broth
- 1 cup Canned Petite Cut Tomatoes in juices
- 1 small onion, or 1/4 cup, finely chopped
- 1 tablespoon minced garlic
- 1 tablespoon plant-based butter
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon Kosher salt
Preparation
- 1. Rise the rice throughly making sure all of the water is drained.
- 2. Chop the onion finely.
- 3. Place the rice, onion, and all of the remaining ingredients in the rice cooker bowl stirring well to make sure all of the ingredients are evenly distributed.
- 4. Close the lid and use your white rice setting.
- 5. Fluff the Mexican Rice when done.
